Anyone know of any cooked chicken recipes that use a good beer.? I'm looking for a recipe for baked chicken, which prior to cooking, you insert a can of beer butt chicken. I always wanted to try it, but can not find a recipe for it.
Beer Can Chicken
4 lb. chicken 1 or a larger
Emeril's original essence seasoning
-OR-
Blend:
Masse v. 1 tablespoon black pepper
1 tsp tablespoon salt
1 tsp tablespoon oregano
1 tsp tea (optional Paprika)
2 v. tbsp extra virgin olive oil (any vegetable oil will also)
1 12 oz can of beer, any brand
Remove chicken giblets package and discard or save for another use.
Rub olive oil or other vegetable oil cooking / all over chicken.
Emeril's Original Essence Spread Seasoning (spices or mixture) generously over chicken and rub-IN.
Chicken Wrap in plastic wrap (or in a large Ziploc bag) and refrigerate for one hour.
To grill:
Preheat grill to 375 ° F to 400 ° F.
If your grill has two burners, heat alone. If it has three, heat the two on the outside and do not light the grill center.
Remove the plastic wrap from chicken. Open beer can (you can add garlic to the can of beer if you like) and insert the full beer can chicken (so that the chicken is standing with the can inserted into it).
Stand the chicken on the grill burner is not lit. The beer can should fit snugly in the chicken and the chicken does not fall over. Close the grill and cook the chicken for about 2 hours or until done.
Enjoy!
FOR baking in an oven
Preheat oven to 325F.
Make a tent on a square of aluminum foil and place on top of chicken.
Bake 1-1/2 to 2 hours (depending on your oven) or until done.
REMOVE the foil tent at the top of the chicken after an hour of cooking.
Note: Extra virgin olive oil or vegetable oil rubbed on the chicken retain moisture Chicken Rub Blend spices and add flavor and aroma pleasantly delicious chicken.
ALSO ... If you want your skin Extra Crispy Chicken, puncture the skin of chicken with the tip of a knife, to allow excess grease to ooze from the skin. This produces a nice crispy skin and Extra.
The only one I know is to put the chicken in the oven, then you pickle on beer before taking the chicken and eat it.
Your method seems a bit retention
