Muffins are a treat but that diabetics are still looking because of the sugar and carbohydrates. Now that we are in autumn, and a muffin is perfect with a cup of hot coffee, hot tea and hot chocolate, I thought to highlight a few muffin recipes that are perfect for diabetics as well as dieters or those who want to eat a healthier muffin. Here are two recipes for muffins perfect for those mentioned above. Tropical Muffins is exactly that, a reminder of being in the tropics, eating tropical fruit and enjoy the warm sunshine and ocean breezes. French Toast Muffins Carb health are as the title indicates. sound with a little wheat and whole flax seeds and even the tempting taste of French bread. Yum

TROPICAL MUFFINS

1 1 / 4 cups all purpose flour

3 / 4 cup Equal Sugar-Lite or Splenda

2 v. teaspoon baking powder

1 / 4 c. baking soda

1 / 2 c. salt

1 / 4 cup unsweetened coconut

3 medium ripe bananas, mashed

1 / 3 cup unsalted butter

1 egg, beaten OR 1 / 4 cup egg substitute

1 tsp teaspoon orange zest

1 / 3 cup orange juice

vegetable oil spray

Preheat oven to 375 degrees. Spray 12 cup muffin pans coated with vegetable oil and set aside.

In a large bowl, sift together flour, Splenda or Equal, baking powder, baking soda and salt. Stir in coconut and make a well in center of mixture. Combine remaining ingredients and put in the well of the dry mixture. Stir until dry ingredients are moistened. Pour batter into muffin cups, filling each two thirds. Bake at 375 for 25-30 minutes or until lightly browned.

FRENCH TOAST MUFFINS HEALTH CARB

cooking spray

egg substitute 1 1 / 2 cups

1 / 2 cup fat free half and half cream

1 tsp teaspoon ground cinnamon

3 c. Splenda granular soup

2 v. tablespoons of milled flaxseed

1 tsp teaspoon vanilla

6 slices whole wheat bread, cut into pieces

Preheat oven to 400 degrees. Spray muffin pan with cooking spray. In a medium bowl, whisk together all ingredients except the bread pieces. Gently stir in bread. Let stand 5 minutes to soak pieces of bread. Divide mixture evenly among muffin cups, slightly overflowing. Bake 25 minutes or until puffed and set. Serve immediately.

by muffin: 140 calories, 17g carbohydrate, 11g protein
