Spray 12 cup muffin pans coated with vegetable oil and set aside. In a large bowl, sift together flour, Splenda or Equal, baking powder, baking soda and salt. Stir in coconut and make a well in center of mixture. Combine remaining ingredients and put in the well of the dry mixture. Stir until dry ingredients are moistened. Pour batter into muffin cups, filling each two thirds. Bake at 375 for 25-30 minutes or until lightly browned. FRENCH TOAST MUFFINS HEALTH CARB cooking spray egg substitute 1 1 / 2 cups 1 / 2 cup fat free half and half cream 1 tsp teaspoon ground cinnamon 3 c. Splenda granular soup 2 v. tablespoons of milled flaxseed 1 tsp teaspoon vanilla 6 slices whole wheat bread, cut into pieces Preheat oven to 400 degrees. Spray muffin pan with cooking spray. In a medium bowl, whisk together all ingredients except the bread pieces. Gently stir in bread. Let stand 5 minutes to soak pieces of bread. Divide mixture evenly among muffin cups, slightly overflowing. Bake 25 minutes or until puffed and set.
