- Chicken & Dumplings Cracker Barrel -

> Chicken and Broth:

3 quarts water

January 3 to 4 pound chicken cut

1 1 / 2 tsp teaspoon salt

1 small onion, sliced

2 stalks celery, chopped

1 clove garlic, peeled and quartered

1 bay leaf

4-6 whole parsley leaves

1 tsp tsp coarsely ground black pepper

1 tablespoon lemon juice

> Dumplings:

2 cups all purpose flour

1 tbsp baking powder

1 1 / 4 c. teaspoon salt

1 cup plus 2 tablespoons tablespoons milk

1. Bring water to boil in large saucepan. Add chicken, 1 c. teaspoon salt, onion, celery, garlic, bay leaf and parsley in the pan. Reduce heat and simmer and cook the chicken, uncovered, for 2 hours. The liquid will reduce by about one third.

2. When the chicken is cooked, remove from pan and set aside. Strain the broth to remove all the vegetables and floating waste. You only want the stock and chicken, then throw the rest of.
