APPLE CAKE Cranberry Orange Bundt
2 cups all purpose flour
1 1 / 2 cups quick cooking oats (uncooked)
1 cup sugar
1 / 2 cup chopped walnuts
1 tsp tablespoon baking powder
1 tsp tsp salt
1 / 2 c. baking soda
1 cup milk
3 eggs
3 / 4 cup finely chopped peeled apple
3 / 4 cup melted butter
1 tsp tablespoon grated orange zest
1 1 / 2 cups cranberries
1 cup powdered sugar
4 1 / 2 tsp teaspoon orange juice
Preheat oven to 325 degrees. Generously grease a 12-cup Bundt baking pan and set aside.
In a large bowl, combine flour, oats, sugar, walnuts, baking powder, salt and baking soda, mix well. Add milk, eggs, apples, butter, orange zest and mix well. Stir in cranberries. Pour the batter into the prepared bundt pan. Bake at 325 degrees oven for 55-60 minutes or until golden brown. Let cake cool in pan for 15 minutes before removing to cool completely on rack. After cake has cooled, mix powdered sugar with orange juice and pour over top of cake. Garnish with nuts, if desired.
