I usually buy Hardy's Stamp of red wine, and sometimes the subject that so far the only one that pleases me in every way. How long a wine will age and improve depends on the structure of tannic wine. A cheap cab shiraz blend, intended for immediate consumption, will be fine for 5-10 years in most cases, as long as it is not exposed to extreme temperatures (hot or cold). Less tannic wines mature and degrade much more quickly (because Beajoulais should be drunk young), while the drier, bigger, more tannic wines, in some cases, can age for decades. Well most wines, if not properly stored, tend to leave vinagrate (turn to vinegar). I store in a cool, dry place, preferably on the side, turning them every month to keep all sediment in motion (so they dont freeze and spoil the wine). unless a very good wine and appetizers and prepared for the long-term storage, I drink it within two years. Usually, unless you spent a fortune to fix selection of wines, it is not useful to keep the wine spent about 12 months, but if she is still there, I remain open and give it a taste before clamping . I have not had the opportunity of this red wine in particular, but I guess you could even hold off the opening until 2010.
